It’s actually really quick and easy to make pancake batter. This recipe is my go-to that never fails and makes amazingly light and fluffy pancakes every time.

Its easy to add berries into the mix, and I will generally make a big batch of plain batter and then drop the requested berries into each pancake as soon as it goes into the pan. This way you can make multiple versions with one batch of batter.

  • 2 cups flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups milk
  • 2 eggs
  • ½ teaspoon vanilla
  • 6 tablespoons melted butter

  • Warm syrup
  • Fresh fruit

Step by Step Instructions

Step 1

In a good sized bowl, whisk the flour, sugar, baking powder and salt together

Step 2

In a separate bowl, whisk the milk, eggs, and vanilla together until smooth

Step 3

Add the wet ingredients into the dry ingredients and blend together until smooth

Step 4

Stir in the melted butter

Step 5

Heat a large non-stick skillet, brush with oil, and spoon your pancake batter into the pan making 2 – 4 round pancakes

Step 6

Cook until you see several small bubbles appear in the batter

Step 7

Gently flip the pancake over – the top should be a nice soft golden brown

Step 8

Cook the other side until it is also a soft golden brown and serve with your favourite toppings
