This is one of my very favourite cookies.

It’s made just like shortbread with a longer slower cook in a single pan you cut into bars so has that firmer bite, but it also has a good helping of chopped chocolate to satisfy the chocolate lover.

Ingredients

  • 1 cup butter
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped dark chocolate – about 3 oz

Step by Step Instructions

Step 1

Preheat the oven to 325 degrees F

Step 2

Blend the butter and sugar together until soft and creamy

Step 3

Mix the flour and salt together

Step 4

Add the flour into the butter and sugar and blend until well combined

Step 5

Mix in the chopped chocolate 

Step 6

Remove from the bowl and knead by hand for 1 minute

Step 7

Press the mixture into a lined and greased 9 x 9 baking pan

Step 8

Prick with a fork

Step 9

Bake for 40 – 45 minutes or until the edges just start to turn golden – turn down the oven to 300F if it browns too quickly, you want to make sure you have a long slow cook to get a nice crisp bite

Step 10

Allow to cool for 20 minutes in the pan and then carefully remove from the pan, slice into bars while still warm

Step 11

Finish cooling on a wire rack
