Perfect Pancakes

It's actually really quick and easy to make pancake batter. This recipe is my go-to that never fails and makes amazingly light and fluffy pancakes every time.

Ingredients
  

  • 2 cups flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups milk
  • 2 eggs
  • ½ teaspoon vanilla
  • 6 tablespoons melted butter

Instructions
 

  • In a good sized bowl, whisk the flour, sugar, baking powder and salt together
  • In a separate bowl, whisk the milk, eggs and vanilla together until smooth
  • Add the wet ingredients into the dry ingredients and blend together until smooth
  • Stir in the melted butter
  • Heat a large non-stick skillet, brush with oil, and spoon your pancake batter into the pan making 2 - 4 round pancakes
  • Cook until you see several small bubbles appear in the batter
  • Gently flip the pancake over - the top should be a nice soft golden brown
  • Cook the other side until it is also a soft golden brown and serve with your favourite toppings
