This is a super easy cookie recipe with loads of peanut flavour.
The dough freezes really well, so you can double up on a batch and have them ready for baking right out of the freezer.
I like to use peanut butter that has no added ingredients, so I do have salt in my recipe, but you can adjust and leave it out if using peanut butter that already contains salt.

Ingredients
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 cup peanut butter
- 1 teaspoon vanilla
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt

Step by Step Instructions
Step 1
Using a hand or stand mixer, mix the butter and both sugars together until light and creamy
Step 2
Add in the egg and mix until well combined
Step 3
Mix in the peanut butter and vanilla
Step 4
In a separate bowl, mix the flour, baking powder, and salt together
Step 5
Add the flour into the peanut butter mixture a little at a time and keep mixing until it is well combined
Step 6
Preheat the oven to 350 F
Step 7
Place the bowl into the fridge for 20 minutes to allow it to firm up
Step 8
Using a cookie scoop or spoon roll the cookie dough into 1 inch balls
Step 9
Place on a parchment-lined baking tray and press with your fingers to flatten slightly
Step 10
Press with a fork to make a crisis-cross pattern
Step 11
Bake for 10 minutes or until the edges brown slightly
Step 12
Allow to cool on the baking sheet for 5 minutes and then place on a wire rack to finish coolingÂ
