Peanut Butter Cookies

This is a super easy cookie recipe with loads of peanut flavour.
The dough freezes really well, so you can double up on a batch and have them ready for baking right out of the freezer.

Ingredients
  

  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Using a hand or stand mixer, mix the butter and both sugars together until light and creamy
  • Add in the egg and mix until well combined
  • Mix in the peanut butter and vanilla
  • In a separate bowl, mix the  flour, salt, and baking powder together
  • Add the flour into the peanut butter mixture a little at a time and keep mixing until it is well combined
  • Place the bowl into the fridge for 20 minutes to allow it to firm up
  • Preheat the oven to 350 F
  • Using a cookie scoop or spoon roll the cookie dough into 1 inch balls
  • Place on a parchment-lined baking tray and press with your fingers to flatten slightly
  • Press with a fork to make a criss cross pattern
  • Bake for 10 minutes or until the edges brown slightly
  • Allow to cool on the baking sheet for 5 minutes and then place on a wire rack to finish cooling
