  • 2 sweet potatoes – small in diameter is better for this dish
  • 3 large round tart cooking apples such as Northern Spy
  • 3/4 cup syrup – could be corn syrup or maple syrup
  • 3/4 cup apple juice
  • 1/4 teaspoon salt

Step by Step Instructions

Step 1

Preheat the oven to 350F

Step 2

Peel your sweet potatoes and slice them into rounds about 1/4 inch thick

Step 3

Peel your apples and cut them in half, remove the core and slice them into half rounds 1/2 an inch thick

Step 4

Arrange in rows in a greased 9 x 9 inch baking dish

Step 5

Melt the butter, syrup, apple juice and salt together

Step 6

Spoon the syrup mixture over the sweet potatoes and apples

Step 7

Cover with foil and bake for 40 minutes

Step 8

Remove the foil, baste the potatoes and apples with the syrup mixture, and bake uncovered for another 45 minutes or until the potatoes apples are soft
