Baked Sweet Potato and Apple

This recipe is great for the holidays with all the flavours of fall packed into a simply stunning side dish.
It looks beautiful and tastes incredible.
If you are planning to use this for a family gathering, it holds up very well to being made the day before. This means you have less prep for the day of entertaining and it will re-heat in about 30 minutes, so can go in the oven while your turkey is resting

Ingredients
  

  • 2 sweet potatoes - small in diameter is better for this dish
  • 3 large round tart cooking apples such as Northern Spy
  • 3 tablespoons butter
  • 3/4 cup syrup - could be corn syrup or maple syrup
  • 3/4 cup apple juice
  • 1/4 teaspoon salt

Instructions
 

  • Preheat the oven to 350F
  • Peel your sweet potatoes and slice them into rounds about 1/4 inch thick
  • Peel your apples and cut them in half, remove the core and slice them into half rounds 1/2 an inch thick
  • Arrange in rows in a greased 9 x 9 inch baking dish
  • Melt the butter, syrup, apple juice and salt together
  • Spoon the syrup mixture over the sweet potatoes and apples
  • Remove the foil, baste the potatoes and apples with the syrup mixture, and bake uncovered for another 45 minutes or until the potatoes apples are soft
