Feel free to use mixed nuts or the choice of one of your favourite nuts – I like to use walnuts and almonds.

- 1 egg
- 3/4 cup unsweetened apple sauce
- 2 tablespoons vegetable oil
- 3/4 cup flour
- 1/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup finely chopped nuts
- 2 tablespoons roasted sunflower seeds

Preheat the oven to 375 F
Step 2
Place baking cases in a 6-cup muffin pan
Step 3
Mix the wet ingredients together
Step 4
Mix the dry ingredients together

Add the wet ingredients to the dry ingredients and stir until just blended

Use an ice cream scoop to fill your muffin cups
