We often make this for guests as it is so elegant to serve, and cooks in just 15 minutes.

Ingredients
- 4 x 6 oz salmon filets
- 1/2 cup small salad shrimp – cold water Atlantic if possible
- 2 teaspoons lemon juice
- 1 teaspoon dried thyme
- 1 tablespoon fresh chopped parsley
- 4 teaspoons butter cut into pieces
- Salt and pepper to taste

Step by Step Instructions
Step 1
Heat the oven to 450 degrees F
Step 2
Pat the fish dry and remove any pin bones
Line a baking tray with parchment paper and arrange the salmon on the tray
Step 3
Sprinkle the lemon juice and parsley and thyme over the salmon
Place the shrimp on the salmon and top with the butter
Step 4
Bake for 15 minutes – this will vary depending on the thickness
Check for doneness – it should flake easily with a fork
