If you are a mushroom lover then you have to try this recipe.
Add in a variety of your favourite mushrooms in the last step for an amazing mushroom burst of flavour.
My favourite is sliced king oyster mushrooms. This is delicious served with garlic toast.

Ingredients
- 1 pound of mushrooms sliced – reserve ½ cup to add at the end
- 1 medium onion chopped
- 1 tablespoon butter
- 2 cups milk
- 1 tablespoon cornstarch
- 1 chicken stock cube

Step by Step Instructions
Step 1
Melt butter in a pan and very gently cook the mushrooms and onions with the pan lid on, until soft – about 20 minutes
Step 2
Remove from the heat and allow to cool
Step 3
Put into a blender and add the milk, cornstarch and stock cube
Puree until very smooth
Step 4
Pour back into the pan and add the remaining mushrooms
Step 5
Heat the soup through stirring all the time adding more milk if necessary – do not boil

- Parsley Chopped – optional
