Creamy Mushroom Soup

If you are a mushroom lover then you have to try this recipe. Add in a variety of your favourite mushrooms in the last step for an amazing mushroom burst of flavour.

Ingredients
  

  • 1 pound of Mushrooms sliced – reserve ½ cup to add at the end
  • 1 medium onion chopped
  • 1 clove garlic chopped
  • ½ tablespoon butter
  • 2 cups milk
  • 1 tablespoon cornstarch
  • 1 chicken stock cube
  • Parsley Chopped – optional

Instructions
 

  • Melt butter in a pan and very gently cook the mushrooms, garlic and onions with the pan lid on, until soft
  • Remove from the heat and allow to cool
  • Put into a blender and add the milk, cornstarch and stock cube
  • Puree until very smooth
  • Pour back into the pan and add the remaining mushrooms
  • On the stove heat the soup through stirring all the time adding more milk if necessary
