This is one of our Grandmas cookie square recipes and is a family favourite.
It is a very easy no-bake recipe and comes together in about 10 minutes.
They do freeze very well, but ours never make it to the freezer – if you make a double batch you might be able to keep some on hand.

Ingredients
- 1/4 cup butter
- 1/2 cup peanut butter
- 1 cup butterscotch chips
- 8 oz muli-coloured mini marshmallows

Step by Step Instructions
Step 1
Grease and line a 9 x 9 inch pan
Step 2
Place the butter and peanut butter in a pan
Step 3
Melt until smooth and combined
Step 4
Add in the butterscotch chips and stir until melted
Step 5
Remove from the heat and cool a little – you don’t want it too hot or it will melt the marshmallows
Step 6
Mix in the marshmallows
Step 7
Spoon into your prepared pan and press down
Step 8
Run your clean hand under some cool water and then use it to finish pressing down the mixture – the water will stop it sticking
Step 9
Allow to cool until firm, remove from the pan and cut into squares

I definitely am not a natural cook, and a,though these are supposed to be easy, I had a hard time mixing in the marshmalllws. My mixture was really really thick. The only thing I can think of is is used natural peanut butter… no additives????
Hello Barb,
I also use natural peanut butter, so yes it will be a little thicker than a peanut butter you don’t have to refrigerate.
Maybe try getting the butter/peanut butter mixture a little warmer – but be carful not to scorch or burn it – before you add in the butterscotch chips. That should make it easier to mix in the marshmallows.

I think your measurement is way off on the marshmallows. 8oz is only one cup. There are a lot more marshmallows needed for this recipe. More like 4-5 cups. Maybe a misprint?

You might be thinking that these are marshmallow rice crispy squares. The marshmallows in this recipe are not melted, they are delightful pillows of fluffiness in a yummy butterscotch and peanut fudge.

8 ounces in weight not volume. Or 250 grams.
8 ounces of liquid is a cup.
8 ounces of dry is 8 ounces times 28 grams is about 225 grams total weight.
Yes indeed. You can pick up the perfect amount in one package from your local store. They typically come in 8oz (by weight) packages.
