Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon fine lemon zest
  • Salt and pepper to taste
  • 4 slices mozzarella cheese
  • 16 asparagus spears trimmed
  • 2 tablespoons melted butter
  • ¼ cup fresh breadcrumbs

How to make Asparagus Stuffed Chicken Breasts

Step by Step Instructions

Step 1

Preheat the oven to 400F

Step 2

Place the chicken breasts one at a time in a plastic food bag and pound with a meat mallet until they are each ¼ inch thick

Step 3

Season with salt and pepper

Step 4

Combine the mayonnaise, parsley and lemon zest in a bowl

Step 4

Spread the mayonnaise mixture evenly over the chicken breasts

Step 5

Top each with a slice of the cheese and 4 asparagus spears

Step 6

Roll up allowing the asparagus tips to poke out of each end

Step 7

Brush with a little of the melted butter

Step 8

Mix the remaining melted butter with the breadcrumbs

Step 9

Top each chicken breast with the crumbs patting them down so they can form a crust

Step 10

Place the chicken breast rolls seam side down onto a parchment-lined baking sheet

Step 11

Bake for 25 – 30 minutes or until done and the juices are running clear and then broil for 2 – 3 minutes to brown the crust
