This is a quick and easy way to make Bruschetta with all the bold flavours but without the need to peel the tomatoes, which can be a little bit of a messy process.

Ingredients
- 2 cups of cherry or grape tomatoes
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1 clove garlic
- 10 fresh basil leaves
- Salt and black pepper to taste
- 8 slices of baguette
- Olive oil to drizzle
How to make Fresh Tomato Bruschetta

Step by Step Instructions
Step 1
Cut each tomato into about 8 small pieces and place a bowl
Stir in the balsamic vinegar and olive oil, salt and black pepper
Step 2
Transfer the tomato mix to a sieve and place it over the bowl to catch the juices
Stir once or twice and discard the juice from the bowl each time while you prep the remaining ingredients
Step 3
Peel and chop the garlic very finely
Wash and chop the basil finely
Step 4
Cut the baguette into slices and drizzle with olive oil
Toast each side in a pan or on a grill until lightly browned
Step 5
Stir the tomatoes once more, discard any juices and put back into the bowl
Stir in the garlic and basil
Step 6
Taste then adjust with salt or pepper as needed
Spoon onto each bread slice
