These crispy chicken thighs are by far one of my favourite recipes. They are quick and easy to make and have so much flavour.

They are also budget-friendly if you debone your own chicken thighs, which if you want boneless chicken with the skin left on you will pretty much have to learn to do this yourself.

You can save even more if you buy when chicken is on sale, debone and then freeze to pull out and grill as needed.

They make great sandwiches or wraps and are amazing sliced to use in a salad or in a pasta dish.

  • 4 good size skin-on chicken thighs
  • 1/2 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • Fresh ground salt and pepper to taste

Step by Step Instructions

Step 1

Pre-heat your indoor grill or BBQ

Step 2

Debone each chicken thigh leaving the skin on

Pat dry your chicken and place in a bowl

Step 4

Add the seasoning and turn to coat all sides of the chicken

Step 5

Place your chicken on your grill skin down if on a contact grill and up if on a BBQ

Step 6

Grill for 5 minutes and flip over – if using a BBQ keep a careful eye for flare-ups when the chicken is skin side down

Step 7

Cook until the juices run clear and the skin is crispy
