Chicken

  • 2 chicken breasts or 4 chicken thighs cut into strips
  • 1/2 tablespoon olive oil
  • 1 teaspoon butter
  • Salt and pepper to taste

Pasta and Sauce

  • 10 oz fettuccini
  • 1 small clove garlic finely chopped
  • 1 tablespoon butter
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon cornstarch
  • 1 cup fresh grated Parmesan cheese
  • Fresh ground salt and pepper to taste
  • Fresh parsley chopped

How to make Chicken and Pasta Alfredo

Step by Step Instructions

Step 1 – Chicken

Season the chicken breast with salt and pepper

Melt the butter and olive oil in a large frying pan

Sear the chicken to lock in the juices, and then cook for another 2 – 3 minutes until cooked through and no longer pink inside

Cover to keep warm and set aside

Step 2Pasta

Cook the pasta according to the package directions and set aside

Step 3 – Sauce

In a large pot, melt the butter

Add the garlic and cook gently for about 1 minute

Gradually whisk in the cream and then the milk and cornstarch

Cook until the mixture is warm – do not boil

Remove from the heat and stir in the cheese until you have a smooth creamy sauce

Step 4 – Finishing

Add the pasta into the Alfredo sauce

Gently mix using tongs to make sure the pasta is evenly coated in the sauce

Add in the chicken

Sprinkle with parsley, more grated Parmesan and fresh ground pepper to taste

Tip

This doesn’t reheat well, so eat and enjoy as soon as you mix in the pasta
