These are our best ever banana muffins.

This is such a great way to use any extra ripe bananas, but I will also buy bananas at the beginning of the week to make sure I can make them for a weekend breakfast.

They are very quick to make and an all-time family favourite that I will make at least once a month. They also freeze really well if you have any left!

Ingredients

  • 3 large ripe bananas
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1/4 teaspoon vanilla
  • 1 egg
  • 1 cup chopped walnuts
  • 1 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Step by Step Instructions

Step 1

Pre-heat oven to 375 degrees F

Place baking cases in a 12 cup muffin pan

Step 2

Peel and mash the bananas

Step 3

Stir in the sugar, slightly beaten egg, cooled melted butter and vanilla

Step 4

Stir in the walnuts

Step 5

Blend all the remaining dry ingredients together in a separate bowl

Stir in the dry ingredients until the flour is just moistened – be careful not to over mix

Step 6

Use an ice cream scoop to fill 12 muffin cups

Step 7

Bake for 20 minutes

Step 8

Cool on a wire rack
