Roasted Pan Veggies

A side of sweet roasted vegetables is a great addition to any meal. This is a quick and easy recipe that can cook while you prepare the rest of your dinner. We have used red and yellow peppers as well as green zucchini, but feel free to use any colour of pepper or yellow zucchini.These roasted veggies are also great for wraps and sandwiches, so make extra to use the next day.

Ingredients
  

  • 1 yellow pepper cut into strips
  • 1 red pepper cut into strips
  • 2 zucchini cut into strips
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees F
  • Spread the peppers and zucchini on a baking tray
  • Drizzle with the olive oil
  • Season with salt and pepper
  • Bake for 40 minutes until the peppers are roasted
