Herb Roasted Potatoes

I love making this side dish in the summer when the garden is loaded with fresh herbs - it's very satisfying to and grab my scissors and head out into the garden.
It works really well wrapped in foil on the BBQ, but you can also make this in the oven.

Ingredients
  

  • 1/1/2 pounds mini round potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon smoked paprika
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 4 sprigs fresh oregano
  • 1/4 cup roughly chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven or BBQ to 425 degrees F
  • Wash and cut your potatoes for even sizing and pat dry
  • In a large bowl, toss your potatoes with the olive oil, celery salt, paprika and season to taste with salt and pepper
  • Place a large piece of foil on a baking sheet - it needs to be twice as long as your baking sheet
    Make 2 more layers of foil over the first giving you a triple layer of foil 
  • Place the potatoes in a single layer on the foil and scatter with your herbs
  • Fold over your foil to make a packet
  • Roast for 30 minutes and check for doneness - they should be buttery soft in the middle
