Scottish Shortbread

2 cups flour 1 cup butter 1/2 cup sugar 1/2 teaspoon salt
Preheat the oven to 325 degrees F
Soften the butter making sure it doesn't get too warm and oily
Blend in the sugar until evenly mixed
Mix the salt into the flour
Cut the flour into the butter mixture a little at a time
Keep adding and cutting in the flour until it starts to form a dough
Gather the dough into a ball
Remove from the bowl and knead for 10 minutes
Roll into a square about 9 x 9 inches making sure the edges are the same thickness as the middle
Prick with a fork
Place on a baking tray and bake for 45 minutes or until the edges just start to turn golden
Slice into cookies while still warm, but leave on the tray to cool
