Scottish Shortbread

Using just 4 ingredients, this shortbread cookie is a wonderful buttery treat with just a touch of sweetness.

Ingredients
  

  • 2 cups flour
  • 1 cup butter
  • 1/2 cup sugar
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 325 degrees F
  • Soften the butter making sure it doesn't get too warm and oily
  • Blend in the sugar until evenly mixed
  • Mix the salt into the flour
  • Cut the flour into the butter mixture a little at a time 
  • Keep adding and cutting in the flour until it starts to form a dough
  • Gather the dough into a ball
  • Remove from the bowl and knead for 10 minutes
  • Roll into a square about 9 x 9 inches making sure the edges are the same thickness as the middle
  • Prick with a fork
  • Place on a baking tray and bake for 45 minutes or until the edges just start to turn golden
  • Slice into cookies while still warm, but leave on the tray to cool
