Oatmeal Raisin Cookies

These cookies are soft, chewy, and packed with raisins. The dough is quite sticky and takes a bit of work at the end to get the oats and raisins properly combined, but the results are well worth it!
These freeze well so you can add them to your bulk cook and freeze list.

Ingredients
  

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 3 cups rolled old fashioned oats
  • 1 1/2 cups raisins

Instructions
 

  • Mix the flour, salt, baking powder and cinnamon together and set aside
  • With a hand or stand mixer cream the butter and sugars together until light and fluffy
  • Add in the eggs one at a time mixing well between each addition to ensure they are well combined
  • Add in your flour mixture until just combined
  • Mix in the oats and raisins - the mixture will be quite sticky, but keep the speed on low when combining so you don't mash the raisins
  • Put the dough in the fridge for 30 minutes to firm up
  • Preheat the oven to 350 F
  • Roll the chilled dough into 1 1/2 inch balls by hand or with a cookie scoop and place on a parchment-lined baking tray
  • Gently flatten each ball with your hand and bake for 12 minutes or until the edges start to brown
  • Cool for 10 minutes on the baking tray and then finish cooling on a wire rack
