Mix oats, chopped nuts, cinnamon and salt together
In a microwave-safe bowl, warm the honey, oil, and vanilla together for 15 seconds and then mix to combine
Pour the honey mixture over the oats and nuts and then mix well to make sure your dry mixture is evenly coated with the oil and honey
Line a 9 x 13 baking sheet with a piece of parchment paper and then spread your granola mix evenly across the pan, pressing down as you go - this will make the mixture form granola clumps
Bake for 15 minutes then remove from the oven and carefully stir in the coconut - the pan will be hot, so use oven gloves for this step
Press the mixture down again and return to the oven for 5 minutes
Remove from the oven - it should be a nice golden brown - and allow it to cool on the pan for 30 minutes
Remove the parchment paper, stir in the dried fruit and enjoy
