Easy Crepe Recipe

Crepes are one of my favorite weekend breakfasts. I think its because I can load it with fruit with less of the "batter" than a traditional pancake and the texture of a good crepe is just perfect. One of the secrets of a good crepe batter is to let the batter rest. This will make sure you have perfectly tender crepes every time.

Ingredients
  

  • 1/2 cup flour
  • 1/2 tablespoon sugar
  • 1/8 teaspoon salt
  • 3/4 cups milk
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons melted butter
  • 1/2 tablespoon vegetable oil for cooking

Instructions
 

  • In a bowl, whisk the flour, sugar, and salt together
  • In a separate bowl, whisk the milk, egg and vanilla until smooth
  • Whisk the wet ingredients into the dry ingredients until smooth
  • Whisk in the melted butter and then let the batter rest for 30 minutes
  • Heat a large non-stick skillet and brush with oil
  • Add about 4 tablespoons of batter to the pan and swirl the batter to the edge of the pan in a circular motion to make a very thin layer
  • Cook until the crepe starts to release from the bottom of the pan, about 2 - 3 minutes and then flip over
  • Cook the other side until it just starts to brown and serve with your favourite toppings
