2x 4oz white fish such as haddock or cod with the skin off
1/4cupcornstarch
Salt and pepper to taste
1/2teaspoonpaprika
3tablespoonsvegetable oil
Instructions
Pat the fish dry to remove any surface moisture
Season well on both sides with salt and pepper
In a large shallow container, mix the paprika with the cornstarch
Dip each piece of fish into the cornstarch mix covering both sides and shake off any excess
Preheat the skillet and then carefully add in the oil – it should just cover the base of the pan
Add in the fish – it should sizzle as soon as it hits the panDo not move the fish for at least 2 - 3 minutes to ensure the cornstarch crust forms
If you nudge it and it moves easily it is ready to flip overFlip and cook for another 3 minutes for the second side crust to form
Continue cooking until done – this will vary depending on the thickness of the fish
