Chocolate Shortbread

This is one of my very favourite cookies.
It's made just like shortbread with a longer slower cook in a single pan you cut into bars so has that firmer bite, but it also has a good helping of chopped chocolate to satisfy the chocolate lover.

Ingredients
  

  • 2 cups flour
  • 1 cup butter
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped dark chocolate

Instructions
 

  • Preheat the oven to 325 degrees F
  • Blend the butter and sugar together until soft and creamy
  • Mix the flour and salt together
  • Add the flour into the butter and sugar and blend until well combined
  • Mix in the chopped chocolate 
  • Remove from the bowl and knead by hand for 1 minute
  • Press the mixture into a lined and greased 9 x 9 baking pan
  • Prick with a fork
  • Bake for 40 - 45 minutes or until the edges just start to turn golden - turn down the oven to 300F if it browns too quickly, you want to make sure you have a long slow cook to get a nice crisp bite
  • Allow to cool for 20 minutes in the pan and then carefully remove from the pan, slice into bars while still warm
