This is one of my very favourite cookies.It's made just like shortbread with a longer slower cook in a single pan you cut into bars so has that firmer bite, but it also has a good helping of chopped chocolate to satisfy the chocolate lover.
Blend the butter and sugar together until soft and creamy
Mix the flour and salt together
Add the flour into the butter and sugar and blend until well combined
Mix in the chopped chocolate
Remove from the bowl and knead by hand for 1 minute
Press the mixture into a lined and greased 9 x 9 baking pan
Prick with a fork
Bake for 40 - 45 minutes or until the edges just start to turn golden - turn down the oven to 300F if it browns too quickly, you want to make sure you have a long slow cook to get a nice crisp bite
Allow to cool for 20 minutes in the pan and then carefully remove from the pan, slice into bars while still warm
