Crispy Pan Fried Fish

This easy fried fish recipe gives you the crispy fish experience without the hassle of using a deep fat fryer.

Ingredients
  

  • 2 x 4oz white fish such as haddock or cod with the skin off
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 3 tablespoons vegetable oil

Instructions
 

  • Pat the fish dry to remove any surface moisture
  • Season well on both sides with salt and pepper
  • In a large shallow container, mix the paprika with the flour
  • Dip each piece of fish into the flour mix covering both sides and shake off any excess
  • Preheat the skillet and then carefully add in the oil – it should just cover the base of the pan
  • Add in the fish – it should sizzle as soon as it hits the pan
    Do not move the fish for at least 2 - 3 minutes to ensure the flour crust forms
  • If you nudge it and it moves easily it is ready to flip over
    Flip and cook for another 3 minutes for the second side crust to form
  • Continue cooking until done – this will vary depending on the thickness of the fish

Notes

Tips
Be careful not to move the fish around too much to make sure the crust doesn’t fall off
A thin cut of fish will make cooking easier as it will cook through to the centre faster
