Herb Baked Salmon with Shrimp

This is one of our family’s favourite meals - it's so full of flavour and very quick to prepare. We often make this for guests as it is so elegant to serve, and cooks in just 15 minutes.

Ingredients
  

  • 4 salmon filets
  • 1/2 cup small salad shrimp – cold water Atlantic if possible
  • 2 teaspoons lemon juice
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh chopped parsley
  • 4 teaspoons butter cut into pieces
  • Salt and pepper to taste

Instructions
 

  • Heat the oven to 450 degrees F
  • Pat the fish dry and remove any pin bones
  • Line a baking tray with parchment paper and arrange the salmon on the tray
  • Sprinkle the lemon juice and parsley and thyme over the salmon
  • Place the shrimp on the salmon and top with the butter
  • Bake for 15 minutes – this will vary depending on the thickness
  • Check for doneness – it should be 145 Degrees F and flakes easily with a fork
