My Favourite Chocolate Chip Cookies

These are super easy to make and unbelievably tasty.
Using just butter, sugar and flour in the base cookie dough will make it easy for you to add in your favourite chocolate chips or chunks.
They also freeze really well so you can pull one or two from the freezer at a time for a warm cookie as an afternoon treat.

Ingredients
  

  • 1 1/4 cups soft butter
  • 1 1/4 cups soft brown sugar
  • 1 teaspoon vanilla essence
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups semi-sweet chocolate chips

Instructions
 

  • Cream butter and sugar together until creamy
  • Mix in the vanilla essence
  • Add in the dry ingredients and chocolate chips and mix well
  • Refrigerate for 20 minutes
  • Turn out onto a clean surface and roll into 2 cookie dough logs
  • Refrigerate for a minimum of 2 hours
  • Preheat the oven to 350 degrees F
  • Slice into cookie rounds and arrange on a lined cookie sheet
  • Bake for 10 – 12 minutes
  • Cool on a wire rack

Notes

Freezing Tip
Slice any unused cookie dough into rounds and freeze in single layers separated with parchment paper
Pull out your desired number of cookies 30 minutes before baking
