Double Apple Muffins

Not too sweet, low in fat, and bursting with flavour, these muffins are easy and quick to make.
I like to make these 6 at a time but it's easy to double the recipe for 12 if needed.
You could also make these in a mini muffin pan for a perfect double bite-sized snack.

Ingredients
  

  • 1 egg
  • 3/4 cups unsweetened apple sauce
  • 2 tablespoons vegetable oil
  • 3/4 cup flour
  • 1/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoons cinnamon
  • 1 medium apple peeled and diced - about 1 cup

Instructions
 

  • Preheat the oven to 375 F
  • Place baking cases in a 6-cup muffin pan
  • Mix the wet ingredients together
  • Mix the dry ingredients together
  • Stir in the diced apple
  • Add the wet ingredients to the dry ingredients and stir until just blended
  • Use an ice cream scoop to fill your 6 muffin cups
  • Bake for 20 minutes
  • Cool on a wire rack
