This breakfast bar checks all the boxes for me - easy to make that is packed with nuts, seeds, fruit, and grains. It has to be delicious and not taste as my husband would say - like chipboard.I love to toast my oats and nuts for a deeper flavour, but you can skip this step if you are short on time.These are great for breakfast on the go with some fresh fruit, and they also make a great snack.
Grease an 8 x 8 inch pan and baseline with parchment paper with an overhang on 2 sides for easy lifting
Sprinkle the oats, coconut, chopped nuts, and sunflower seeds on a baking tray and toast in the oven for 5 minutes, stir and bake for another 5 or 6 minutes until gently toasted
Remove the tray from the oven and transfer to a bowl and stir in the raisins
In a pan, melt the honey, brown sugar, oil, and cashew butter together and gently simmer for 1 minute stirring to ensure it doesn't burn
Stir in the vanilla and salt
Pour this mix over the nut mixture and stir well
Pour into your prepared pan and press down firmly
Sprinkle the chopped chocolate over the top of the bars and press in with the back of a spoon
Refrigerate for 2 hours, then remove from the pan and cut into bars
