Bouquet Garni

The bouquet garni is an aromatic bundle of herbs either tied together with string or bundled into cheesecloth so you can add a few peppercorns if desired. It is and mainly used for soups, stocks and stews, and is great for adding additional flavour without the challenge of picking out the tough leaves and stems before serving.

Ingredients
  

  • Food safe cheesecloth
  • Food safe butcher's string
  • 4 - 6 parsley stalks
  • 2 - 4 sprigs of thyme
  • 1 bay leaf
  • 5 or 6 peppercorns - optional

Instructions
 

  • Cut and wash your fresh herbs
  • Cut a 10-inch square of cheesecloth, then rinse and wring it out
  • Place your herbs and peppercorns in a neat pile in the middle.
  • Pull up each corner of the cheesecloth to make a bundle
  • Tie with the butchers string
