Banana Walnut Muffins

These are our best-ever banana muffins.
This is such a great way to use any extra ripe bananas, but I will also buy bananas at the beginning of the week to make sure I can make them for a weekend breakfast.

Ingredients
  

  • 3 large ripe bananas
  • 3/4 cup sugar
  • 1/3 cup melted butter
  • 1/4 teaspoon vanilla
  • 1 egg
  • 1 cup chopped walnuts
  • 1 1/2 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Pre-heat oven to 375 degrees F
  • Place baking cases in a 12 cup muffin pan
  • Peel and mash the bananas
  • Stir in the sugar, slightly beaten egg, cooled melted butter and vanilla
  • Stir in the walnuts
  • Blend all the remaining dry ingredients together in a separate bowl
  • Stir in the dry ingredients until the flour is just moistened – be careful not to over mix
  • Use an ice cream scoop to fill 12 muffin cups
  • Bake for 20 minutes
  • Cool on a wire rack
