A fruit crisp topping is a quick and easy dessert to make. You can use it for an apple crisp, or any of your favourite fruit-based fillings such as blueberry, peach, rhubarb, or any combination of berries in season.
In a good-sized bowl so you have lots of working room, measure out your flour and stir in the salt
Add in your cold cubed butter or fat
With clean cold hands, scoop up some of the flour with some of the butter and rub it together across your fingers with your thumb - this is called the rubbing in method
Keep working on it until it looks like fine breadcrumbs
Stir in the brown sugar making sure you break up any lumps
Stir in the oats
Squeeze the topping by the handful to make some large clumps
Layer the crisp mixture over the fruit topping making sure you have the clumps evenly spaced
Bake for 35 - 40 minutes or until the fruit is bubbling and the crisp is a nice golden brown

Tips for rubbing in your butterIf the butter starts to become too soft put the bowl into the fridge for 10 minutes or so to cool it downShake the bowl to bring any of the bigger lumps to the surface
