Perfect Meatballs

Make a big batch of these and flash freeze in a single layer before you bag them up so you can pull out the exact number needed. Our favourite meatball meals are spaghetti and meatballs with a sweet and sour tomato sauce or meatballs in onion gravy with mashed potatoes.

Ingredients
  

  • 1 large sweet onion
  • 1 clove garlic
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 pound ground chicken
  • 1/2 cup rolled oats
  • 1 egg
  • 2 teaspoons dried Italian herbs
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1/3 cup parsley
  • 1 teaspoon celery salt
  • salt
  • pepper

Instructions
 

  • In a large frying pan melt the butter and add the olive oil
  • Cook the diced onion and finly chopped garlic until soft and golden and then allow to cool
  • Preheat the oven to 375 degrees F
  • Place all the ingredients in a large bowl along with the cooled onion and garlic mix
  • Blend the mixture together
  • Once the mixture is evenly blended, roll into even sized balls about 1 1/4 inches in diameter and place on the baking trays
  • Cook for 30 - 35 minutes until cooked through
  • Cool on the trays
  • To freeze, once cooled remove from the trays and place in a single layer in a large freezer bags

Notes

This recipe makes about 90 meatballs that are about 1.5 inches in diameter
Freeze flat and then once frozen, you can gather up into a single bag to store in the freezer to use as needed.
