Make a big batch of these and flash freeze in a single layer before you bag them up so you can pull out the exact number needed. Our favourite meatball meals are spaghetti and meatballs with a sweet and sour tomato sauce or meatballs in onion gravy with mashed potatoes.
In a large frying pan melt the butter and add the olive oil
Cook the diced onion and finly chopped garlic until soft and golden and then allow to cool
Preheat the oven to 375 degrees F
Place all the ingredients in a large bowl along with the cooled onion and garlic mix
Blend the mixture together
Once the mixture is evenly blended, roll into even sized balls about 1 1/4 inches in diameter and place on the baking trays
Cook for 30 - 35 minutes until cooked through
Cool on the trays
To freeze, once cooled remove from the trays and place in a single layer in a large freezer bags
